Ingredients
Warm Nourish Bowls
- 5 cups cubed sweet potatoes
 - 1 tablespoons olive oil
 - ½ teaspoon salt
 - 2 tablespoons maple syrup
 - 3 cups cooked farro
 - ⅓ cup dried cranberries
 - ⅓ chopped pecans
 - ¼ cup sliced red onion
 - 1 cup of Revol Greens® Organic Sweet Butter Blend
 
Dressing
- ¼ cup olive oil
 - 2 tablespoons apple cider vinegar
 - 2 tablespoons maple syrup
 - 1 tablespoon spicy brown mustard
 - 1 crushed garlic clove
 - ½ teaspoon salt
 
Instructions
- Preheat oven to 400 F.
 - Add the sweet potatoes to a large bowl and combine with olive oil, salt, and the maple syrup.
 - Spread out on a baking sheet and bake for 20 minutes.
 - In a small bowl, combine the dressing ingredients.
 - Put the butter and red leaf lettuce in a large bowl.
 - Add the roasted sweet potatoes, farro, dried cranberries, pecans, red onion, and dressing to the bowl with the butter lettuce and toss.
 - Serve warm.
